Mini- Cheesecakes

Here is a fun & easy recipe from my mother. I remember chomping these up during my later childhood years. It's ideal for group events--simple to multiple the serving size, creative/colorful presentations with various fruit toppings, & a cute way to serve real-tasting cheesecake without the forks! Here's a photo of the batch I made last night.

muffin tin foil liners
12 vanilla wafers
2 8oz. cream cheese, softened
1/2 cup sugar
1 tsp. vanilla
2 eggs
10 oz. fruit topping/pie filling (cherry, apple, blueberry, strawberry...)

Preheat over to 325.
Place 1 wafer in each liner.
Mix cream cheese, vanilla + sugar on medium speed until well-blended.
Add eggs and mix well.
Spoon over wafers, filling cups 3/4 full.
Bake for 25 minutes.
Remove from pan after cooled.
Top with fruit and refrigerate until served.
Makes 12 cupcake sized servings.
